Pumpkin Cake Cookies
During college you could not pay me to go buy all the staple ingredients you need on hand for baking. Not only did I not have room to store them all in our kitchen serving 7 girls, but that was also not a cost I could justify. However, these cookies require three ingredients and one bowl and come out tasting incredible. Now THAT I could not turn down.

1 box spice cake mix

1 can 100% pumpkin puree

9 oz. bag semi sweet chocolate chips

Preheat the oven to 350 F / 180 C.

In a large bowl, add the cake mix and pumpkin puree and stir until a dough texture forms.

Add in the chocolate chips and combine.

With a spoon or ice cream scooper, scoop the batter into ball-shape cookies and place on a cookie sheet evenly spread apart.

Bake for 12 minutes. Once removed from the oven, allow to cool fully.

Place in an air tight container, separating the layers with parchment paper. Cookies can remain in the fridge for up to one week.
