Marry Me (Creamy Tuscan) Chicken 

I'm sure you've seen this creamy chicken recipe all over your feed. It's called marry me chicken for a reason! I've adjusted the recipe to be best fit for meal prep!

  • 2 cups rice, dry 

  • 4 chicken breasts 

  • ½ white onion, chopped 

  • 3 Tbsp olive oil

  • 3 cloves garlic

  • 1 tsp salt 

  • ½ tsp pepper

  • ½ Tbsp italian seasoning 

  • ½ cup chicken broth

  • ½ cup heavy cream 

  • ½ cup sun-dried tomatoes, chopped

  • 2 handfuls spinach 

  • 1 lemon 

  • ¼ cup grated parmesan 

  1. In a large sized pot, cook 2 cups of dry rice, according to package instructions. (Typically, rice is cooked at a 2:1 ratio, water:dry rice. Combine into the pot, bring water to a boil, and then turn down the heat to simmer for 20 minutes or until water has all been absorbed.) 

  2. In a large skillet pan over medium heat, drizzle olive oil, chopped onions, and minced garlic. Add chicken breasts into the pan. Allow to cook fully (each side will require 5-6 minutes, to check the chicken is cooked, slice into the largest point of the breast to confirm all meat is white). 

  3. To the pan, add seasonings, chicken broth, heavy cream, and sundried tomatoes. Mix thoroughly and allow the ingredients to simmer together. 

  4. Add in spinach and juice from one lemon. Stir and cover until spinach is fully wilted. 

  5. Add in parmesan and stir until melted into the sauce. 

  6. Dish rice into 4 meal prep containers. Spoon one chicken breast and equal parts sauce over the rice. 

  7. Keep the meal in the refrigerator for 4-5 days. When ready to eat, heat in the microwave for 2 minutes.
