Feta Chicken Meatballs
These flavor-packed meatballs are spiced, nutritious, and cheesy, and are a great way to step up your greek salads or bowls!

1 lb ground chicken, raw

½ cup feta, crumbled

1 egg

1 Tbsp flour

½ cup spinach
-
½ tsp salt

¼ tsp pepper
-
½ tsp garlic powder
-
½ tsp onion powder

1 tsp cumin
-
1 tsp Italian seasoning (oregano, parsley, rosemary, thyme and/or basil)

Preheat the oven to 400 F / 200 C.

Add all ingredients to a large bowl. With your hand or a large spoon, mix everything together thoroughly until spices are fully distributed. I recommend just sticking your hand in there and squeezing everything together. Does it feel great? No. But is it effective? Definitely.

Spray a sheet pan with some non-stick spray or a bit of olive oil. Scoop chicken mixture into one inch balls and roll in your palms to form their shape. Place on a sheet pan in even rows, not touching other meatballs.

Bake for 20-25 minutes until browned.

Place in a sealed container and refrigerate for up to one week. Heat for 1 ½ - 2 minutes.
