Peach Salsa Prawn Bowl

​This fresh, summer-y bowl is light and refreshing while still providing loads of nutrients, fiber, protein, and flavor!

Ingredients

  • 3 fresh peaches 

  • 1 red bell pepper

  • 2 tomatoes 

  • 1 cucumber

  • 2-3 green onion shoots 

  • 1 Tbsp honey

  • 1 Tbsp olive oil 

  • Juice of 1 lemon or 2 limes

  • Salt 

  • 2 cups dry rice 

  • 1 lb cooked and deshelled prawns 

  • 1 can black beans 

  • Salsa (optional)

  1. Finely dice all fruits and vegetables, and add to a medium sized bowl. 

  2. In a small bowl or cup, combine honey, olive oil, lemon juice, and salt. Mix until combined, pour over diced salsa, and stir.

  3. Cook rice on the stove. In a large sized pot, cook 2 cups of dry rice, according to package instructions. (Typically, rice is cooked at a 2:1 ratio, water:dry rice. Combine into the pot, bring water to a boil, and then turn down the heat to simmer for 20 minutes or until water has all been absorbed.) 

  4. If frozen, thaw prawns by placing the sealed package in a bowl of warm water to sit. 

  5. Drain and rinse can of black beans. 

  6. In 4 meal prep containers or bowls, divide rice, beans, prawns and diced salsa. Regular salsa can be added for extra flavor if desired.

  7. Keep refrigerated for up to one week. Meal can be eaten cold or warmed in the microwave.
