Smashed Chickpea Salad 

This chickpea salad is a delicious, creamy, savory filling for a fiber-filled sandwich, or a nutritious spread on crackers.

Ingredients 

Directions

  • 1 can chickpeas, drained and rinsed

  • 3 Tbsp mayo

  • 1 Tbsp lemon juice

  • ½ tsp salt 

  • ¼ tsp pepper 

  • ½ tsp garlic powder

  • ½ tsp paprika

  • ½ tsp onion powder 

  • ½ red onion, diced

  • 1 Tbsp fresh or dry dill

  1. Add the chickpeas to a bowl, and mash with a fork or potato masher. Mash until smooth with a few chunks. 

  2. Add all other ingredients to the bowl and mix.

  3. Place in a sealed container, and refrigerate for up to 4-5 days.

  4. This chickpea salad is great on a sandwich with tomato and lettuce for a meal, or as a dip with crackers for a snack.
