Smashed Chickpea Salad
This chickpea salad is a delicious, creamy, savory filling for a fiber-filled sandwich, or a nutritious spread on crackers.

1 can chickpeas, drained and rinsed

3 Tbsp mayo

1 Tbsp lemon juice
-
½ tsp salt
-
¼ tsp pepper
-
½ tsp garlic powder
-
½ tsp paprika
-
½ tsp onion powder

½ red onion, diced
-
1 Tbsp fresh or dry dill

Add the chickpeas to a bowl, and mash with a fork or potato masher. Mash until smooth with a few chunks.

Add all other ingredients to the bowl and mix.

Place in a sealed container, and refrigerate for up to 4-5 days.

This chickpea salad is great on a sandwich with tomato and lettuce for a meal, or as a dip with crackers for a snack.
