Sheet Pan Broccoli, Sweet Potato, Chicken Sausage

So easy it's difficult to consider it cooking. Packed with protein, carbs, fiber, and fats, this meal is perfect for when you're tight on time, but not willing to sacrifice taste or nutrients. 


  • 2 sweet potatoes, diced 

  • 1 head broccoli, chopped 

  • 1 pkg. Apple gouda chicken sausage, sliced

  • Shredded cheddar cheese

  • Olive oil

  • Spices: salt, pepper, garlic powder 


  1. Preheat oven to 400 F / 200 C. Wash and dice two large sweet potatoes into 1” chunks. Wash and chop head of broccoli into large florets. Slice sausages (usually 4-6 per package) into rounds. 

  2. Spread sweet potatoes, broccoli, and sausages evenly on a baking tray. Coat with a drizzle of olive oil and spices. Bake for 20 minutes until soft.

  3. Sprinkle shredded cheese over-top of the entire tray and place back in the oven for 5 minutes or until melted. 

  4. Divide into four meal prep containers. Refrigerate for up to 4-5 days. When ready to eat, microwave for 1 to 1 ½ minutes.
