  • 1 large sweet potato

  • 1 head of cauliflower

  • 1 14oz can coconut milk

  • 2 cups chicken broth

4. Roasting the Vegetables


Place the sheet pan in the oven and roast the vegetables for about 40 minutes. This process softens them and enhances their natural sweetness.


5. Transferring to the Pot


Once roasted, remove the tray from the oven. Use tongs to transfer the vegetables from the tray to a large pot on the stove. For the garlic, simply squeeze the now-soft cloves out of their skins using the tongs.

If you don’t have an immersion blender, you can transfer everything into a traditional blender. Blend until smooth, then transfer it back to the pot. I recommend having an immersion blender; they often come with multiple attachments like a whisk and chopper to help reduce dishwashing.


7. Storing for Later


Divide the soup into six meal prep containers. It can be refrigerated for up to one week. Alternatively, you can freeze extras until you're ready to eat.


8. Reheating and Enjoying


When you're ready to enjoy your soup, warm it in the microwave for about two minutes. I love to pair it with a grilled cheese turkey salad for a protein boost and a satisfying crunch!
